Blueberry Flapjacks

Lockdown London!  Crazy times!  Simple recipe!  Enough said!

INGREDIENTS

Makes 12 flapjacks
200g coconut oil (you could use butter..)
7 tbsps honey (or agave syrup)
500g oats (or muesli)
1 ripe banana (mashed)
350g blueberries (or raspberries), frozen is fine
grated juice and zest of one lemon
1-2 tsp honey or maple syrup (optional)

Preheat the oven to 180C, Gas Mark  .  Line a 23 x 33cm tin with baking parchment.

In a large saucepan melt the coconut oil (or butter) and honey.  Add the oats and banana and mix together well.  In a separate pan, heat the blueberries with the lemon juice and zest until the blueberries are just beginning to soften.  Add the extra honey if you think you would like a slightly sweeter flapjack.

Put half the oat mixture into the prepared tin and press down firmly.  Next add all the blueberry mixture making sure the berries go to the edges of the tin.  Now add the other half of the oats and press down gently but firmly.

Put in the preheated oven and bake for 20 minutes or until golden brown.  Take out of the oven and leave to cool in the tin.  Before you take them out of the tin cut into slices (it’s easier this way!).
